If the red light comes on, then the water temperature is well over 100'C - it stays in the normal position till it gets really hot.
If you are hearing the fan cut in then it should be ok - mine did this last year towing the caravan - found the viscous unit was resulting in the ECU thinking the fan was running flat out. New fan (From Advanced factors - same as LR one, but significantly cheaper!)
I've also cleaned the rad out 3 times now since Salisbury - the last time I used some Autosmart G101 first and despite looking fairly clean, still got a load out.
I use a jet wash from inside the engine bay with a 90' fan spray to clean mine (This reduces the direct pressure on the fins and they don't bend)
I suspect it is your radiator that is partially blocked.Mark.

When I stopped & opened the bonnet the temperature felt same as normal, expansion bottle was hot but not massively so. Odd there is no beep when the red light comes on.

Mind you, level at the coolant bottle was fine when I was looking under the bonnet at the side of the road.
