UPDATE

Stripped it again to make double sure. Don't think it is the EPB now. Whilst the sliders on the caliper are certainly loose I pushed the caliper back with a tool and it not seized however once re assembled and pressure applied the caliper is not releasing and binding. I presume this is the caliper itself playing up and not something else in the system from the servo not releasing? The NSR is fine and working as expected.

I've order a set of calipers from Advance factors for good measure.

Everyone concur that caliper should be the issue given the explanation I've shared?
