In Oz, there are around 35 different AT tyres that will fit the 18" rims on a Disco. So here there are plenty more to choose from than just Pirelli or GG. The UK market may be a little more restricted, but I'd still expect most of those 35 to be available.

Bigben, if you are referring to the Cooper 285/60/18's, there are no modifications required, however they do rub slightly on the front chassis rails when reversing on full lock.
Also for some reason they wont work with a 'ARB' bullbar, yet they do with a 'Opposite Lock' bullbar. Both bars are identical to look at, however its to do with the placement of the wiper washer bottle.

The best size to fit that won't require mods, doesn't rub and will fit in the spare wheel-well fully inflated is the 265/60R18. This will give you a slightly taller ride (around 1/2"), but won't affect the electronics etc.

My choice in that size would be the new Cooper AT3 or the Mickey Thompson STZ. However, we have quite different minimum load ratings here in Oz (min 109) compared to say the UK, so you'd need to check if these are legal where you are.

The General Grabber AT in 265/65R18 is a Light Truck construction (122 load rating) - it's oversize, but the same rolling diameter as the 265/70R17 that many D3 owners fit. In that size, the Cooper ATR is also a high-load tyre (114).
