So what's the best point to break into the headlamp circuit then? Which wire is it? (Thinking about installing a set of driving lamps sometime using a good old relay and switch).

I picked up a feed from the O/S headlamp, about 50mm back from the plug on the blue/slate wire.. if you use the other side, it's the blue/black wire
relay connections were:-
85 - to switch (which switches to -ve)
86 - to high beam from headlamp loom, via 3A fuse
87 - to driving lamps
30 - to battery +ve via 20A fuse (assuming 2 x 100W lamps)
all connections were soldered and protected with adhesive lined heatshrink tube to prevent water ingress

Presumably your 85 just switches to earth, rather than -ve on battery?

Yep, there needs to be a manually operated inhibit switch in the circuit somewhere to comply with C&U regs.
Strictly speaking, there is no 'earth' or 'ground' on a vehicle as there isn't an electrical path to terra-firma although in the real world earth, ground, negative and -ve are used interchangeably, this can be picked up from any of the -ve connection studs on the body - I used one in the drivers footwell

I think this should be about right. There are variations on a theme - the switch could go in a couple of places, e.g. headlamp circuit, but I have done this to match Iain's description.

Has anybody mounted non-LR lights directly to the bumper top, or is this too wobbly. Looks as though most people have used LR lights and brackets or attached to foam a-bar or LR brush bar. Would be nice if somebody made a bumper top bar like they do for the defenders that you could hang a set of lights from.

Si, the bumper top is too wobbly and you'd also struggle to remove the front grille (and therefore the headlamps)
The reason I switched the negative (as your excellent illustration shows ) is so that there is only one wire running through the bulkhead
