Is there a way to see live data for the cruise control switch?
My wife’s Volvo had a sticking cruise control button. Cruise would start and work just fine but would cut out after 5 minutes due to the button being continually depressed. If the switch or connections are bad, you might be getting similar signals causing the cruise to time out. The shop manual calls the switches “ladder type resistive switches” which step the 5V signal voltage sent to the ECU for control. Some mild corrosion could inhibit the quality of that signal and give false inputs.
Short of that, monitoring wheel speed data makes a lot of sense. Could also monitor data on the clock spring (steering wheel position, yaw, etc.) and see if you get any weird readings while turning the steering wheel. 2008 LR3 HSE, 4.4L V8

Use a tester that requires a load, the type that lights a bulb when powered on, not a multi- meter as they can show continuity when not under load. Include the clock spring. It can when others can't,
It will when others won't,
It goes where others don't.

And press the cruise steering wheel buttons and see if they all register working.
I would have thought this was better idea. See what the ecu thinks. and no disassembly
