Of course Motolab its not only one problem it could be more but when it gets stiff in some areas of turning this is the trace number one to follow.
Low level on reservoir can give this greyish look because air bubbles is mixed in the oil and it could get problem with the assisted power.
Correct oil is also a culprit and a fresh oil will be more stabel and resist foaming better.
Mixing 2 different oil is also a no no.
A mechanical fault can of course develop in the rack itself if its hit hard by a raised sidewalk or similar but wouldent normaly turn freely when wheel is lifted of the ground you would probably feel some binding or perhaps a leak from one of the ends.

There is a “filter” But that filters only rather big particles..... not like an oil filter....
For the record, i, in this case do not need help... just wanted to give some help/advice  ..
By explaining that there can be different sources for sound like problems... telling here .” IS” can costs extra money, since the U joint piece from JLR is not cheap, and alternatives are know to be rather bad....
Message: Check first before you buy the replacement parts, since it is not by standard THE solution...
(As my oil is, OEM JLR, right level.... same problem... ravenol, also gives the same effect... as i tried to flush it with a few liters of fluid and used cheaper ATF red, for that... still grey alu like colour, although after 4 liters flushing, color remained red... transfered it al back to ravenol and then JLR oil... all red stuff gone, it turned grey again after 2 days driving..
if it is air, it should be correct color after a few hours or even a day)
I have a new pump... but weather is too bad for a few hours work, outside now.. Best regards

S_Kirk: I have read this entire thread and I am curious about if you did fix the steering and what was the real fault? I see from the dates this is a while ago so you have probably solved your issue!
I have similar sympthoms on my '05 D3...
- Steering wheel get heavy/friction in 45 degrees from center position on both sides. May not self center if left in this position. The position is always the same, not random.
- Happens around 40km/h and above, not noticable in low speed.
- mostly not before after driving 15 minutes. May heat be an input to this?
- Irregularly, not in every turn
- Car is normal when standing still and in low speed.
Checked and replaced:
- Replaced lower steering column, nothing changed.
- Replaced all suspension arms included supsension ball links holding the hubs.
- Replaced steering rods included ball links.
- Fluid level ok, no leaks. Not replaced.
- Feels ok when turning wheel from side to side with car jacked up. Both with engine on and off.
Next to try:
- Change lower steering column one more time (in case it was a fault new part).
- Power steering reservoar
- Steering rack? 
I never did resolve the issue - had to sell the car for different reason (one on them being that it simply got too expensive to keep it running  )
My dealer/reapair shop figured it had to be the pas fluid being able to pass through the seals in the steering rack, and the only solution they offered was to replace the entire rack assemply.
I did most of the smaller repairs suggested here on the forum or from the shop to solve the issue, and none helped.

Thank you S_Kirk and all you other friends for the answers.
The plan is to replace lower steering column with the universal joint again. And be sure the new parts is a original JLR part. And also replace the oil.
Since the behaviour is symmetric I hope the universal joint will help.
The car is run 190000km, and have had this symptoms from 140000km but they appear random.

I registered just to thank you you all: indeed my issue was to do with the lower steering column U joint. It saved a ton of time and money 🙂

in the end, it was my steering rack who needed a overhaul...
i bought a used one, so i had some time to overhaul my own..
but that used one is still in the D3.. doing it's job fine ;- Best regards
