overfinch supersport 20 inch
Hi can I fit overfinch supersport 20 inch alloys to my Discovery 3 HSE with General Grabber AT 275/45/20
or will I have to fit a UHP tyre 255/50/20

yes and yes - 20" supersports with 275/45s are fine - just make sure they're not chinese copies of the supersports.

I had Grabber 295/45/20 UHP's when I ran a set of these wheels [for a few weeks] on my old D3.
How easy is it to spot chinese copies ?
Are original LR rims stamped? - or are the chinese simply stamping the rims to fool us?

These arent LR rims anyway - they were originally Overfinch, but then Rimstock/Team Dyanmics had them under the Super7 model name as well.
For genuine LR rims, then yes, there is an LR logo in the back of the casting, along with P/Number and country of production.
