The temperature sensor will only read the temperature of the water it is surrounded by.

If it is not immersed in water, it will not read correctly...

Ronster you sensible or lucky you spotted the problem so quickly, most owners in South Africa have to deal with the resulting engine failure( not cut of switch relating to low coolant) hard believe on such a modern engine , it's a known issue, as a result of the high risk, the part is change with belt change, I would speculate its to do with the high summer temp?
A few mods... and keeping it all running...Faultmate MSV2

Only way to tell with the engine is to get a new connector fitted and fill with water and try it. As DM said if the sensor is not immersed in water it wont read correctly/at all, the oil light flashing then being on for a minute would have been enough to make me fly into mad panic and switch it off at first opportunity! Fingers crossed that you're engines all ok Thumbs Up

Land Rover should change the water temp sensor position then?
Thanks

I still get an intermittent "Coolant low" level with enough water in the tank?

Think you are worrying over nothing TBH...

If the low coolant message is on the dash, you either have no coolant, or the sensor/float is faulty. As you have coolant in yours, stick a new bottle on it Thumbs Up

The manifolds are well known for doing this. They are plastic and can crack. This crack can open only when hot and close when cooler. So could have been happening for a while before finally going.
