2005 Discovery 3 TDV6 S Manual Alveston RedDiscovery 3
Locking differential oil

The service schedule calls for an oil change at 75k- what/where is this. Seems to be different to axle oil change interval, so I assume it is a centre diff? Transfer box oil is changed at the same time, but this is easy to spot.
Any recommendations on oil for both, and quantities?

That would be the locking differential on the rear axle, it is unlikely you'll have one but you may have. It has different oil to the normal differential. First you need to check to see if you have the locking diff or not. If you have one the diff will have wires going to a motor on top of it.
 You guys are gonna be busier than a test bench in a plunger factory!
