It would be great to recreate like the airlplane moving map.

The only way I could see to get this working would be if you had the Gvif unit fitted you would have to tap in to the splice wire that goes in-between the Gvif unit and the sat nav computer under the passengers seat to get the map up on the rear screens, it would also show you your reversing camera picture as well...
It should be quite easy to tap in to the video outside of this link.
