Hi,
You can use engine braking at any speed, the car won't allow you to select a gear that is too low for the speed that you're travelling so you can't do any damage.
If your foot is off the accelerator pedal then there is no fuel flowing to the engine so it makes no difference to fuel consumption whether you use engine braking or you use the brakes. There would however be a difference between keeping on the power then braking to a stop compared with lifting off the accelerator early and slowing down without using the brakes. The second way will save fuel compared to the first.
Sport mode keeps the gearbox in the most responsive gear for the road speed whereas Drive tends to select a higher and more economical but less responsive gear. Sport mode is good for roads with lots of bends or overtaking where you need the response. Drive is better for fuel economy.
You can use sport mode as much as you want, there is no limit but you'll burn more fuel by using it.
