I currently drive on Pirelli Scorpion tyres.
I live in spain most of my driving is v fast motorway driving 80-90 mph for 1 or 2 hours, however at the weekends I am in the mountains fishing or shooting. The off road conditions here are very hard ruts and sharp rocks, which just shred my tyres,
Can anyone suggest a better off make? That wouldn't shed like this but still be safe on the motorway?

I don't think such a tyre exists.
Your post suggests that you need an ultra tough side wall and I'm only aware of some Mud Terrain tyres (not suitable for fast motorway use) that claim to have these.
I think you'll either have to switch tyres/rims at the weekend or chance your luck with Pirelli ATR's. This link has some good info. on AT tyres:

I don't think even the mighty ATR will be tough enough for the off-road conditions you describe, they'd handle the motorway well though.

Look for tyres with a light truck (LT) designation. My BFG T/A tyres have this (with a 3 ply sidewall). I'm sure that there are other brands out there' The Bearded Dragon
