in truth, this couldn't have been the case. Parked at my dad's on his sloping drive and had 60 miles range. When I restarted the car 3 hours later, it said "distance to empty 1 mile" and nearest fuel was about a mile away, so drove very gently.
Took picture at the fuel pump and put 40 litres in.
Gauge is now showing a smidge under 3/4 full, which should have taken ~ 55 litres by my estimation.
Question is ... does the car go into limp mode or anything when it "thinks" range is zero ?

Yes. It introduces a misfire using the engine software. If this is ignored then it will shut off the engine, allowing you to restart & carry on another couple of miles before doing the same.
The strategy was introduced to stop the high pressure pump from actually running dry of fuel & causing damage.
Which would have been a bit naff as I had about 15 litres in the tank, the car being confused by the slope of the drive I guess?
Wonder if it would have recalculated if I'd stopped on the the flat for a minute?.

Warm fuel will give a reading higher than cold, so parking up after a days driving with the gauge on, lets say half, in the morning it might show something in between half and a quarter.
Add in the slope, and it can give you quite a shock.

For what it is worth ........
The fuel gauge in my Disco 4 Commercial MY13 SDV6 has never been correct from day one. They fitted a new sender 6 months from new (I have owned it for 10 years), which did not change it.
If I run it to zero and then fill up the best I can get in is 67 or so litres, noting it is an 85-litre tank.
On more than one occasion I have gone past zero (the needle does not show a negative, just sits at zero). On one journey I was more than 30 miles past zero (looking for fuel late at night) and I have never seen a warning (other than low fuel) or gone into any kind of limp mode!!

I thought the tank in the D4 was about 72 / 75 litres? Well, you learn something new everyday. I have never got more than 67 litres in mine either.

IFAIK, it doesn't just measure the fuel level directly but blends-in information from the injectors. Each pulse is (supposed to be) a known amount so count the pulses...
