What I do is drive with the live values showing I can see its working then note the value that is being read when I am happy the car is driving straight(that may not mean the steering wheel is straight). Then you can pull up and move the steering to the same value then run the calibrate. That way you should be fairly certain that the angle sensor will be as close to zero as possible while driving straight. It doesn't need to out by many degrees to throw a wobbly.
