The wading depth is LR's "maximum recommended" depth rather than an official LR "go deeper than this and kill it instantly" depth. There are numerous videos of LR products in deeper water than recommended and still going (although whether they suffered later is anyone's guess).
Of course, the big issue with driving in water is not knowing what's going on below the surface. Even a road can be lethal. This picture from RRSport shows an example. Apparently the water looked ok when it was flooded as it wasn't very deep on the roadway.
