It certainly won't hurt switching it off, I personally do when ever I go off road as a simple precaution, but remember when ever you change TR programs it comes back on. As I understand it even then it is not off it just takes more effort to get it to work.
You are quite right, it's always on, but turning it "off" changes the threshold of when it engages. DSC is dumb in sand. LR's own literature recommends turning it off. Nothing sucks more than charging up a hill and having the engine just shut down on you. Foot to the FLOOR and turning 800 rpm and sliding backwards is not my idea of fun.
FWIW, I find 3rd gear (petrol) the best gear in sand. Lots of rev's, plenty of torque, and just enough ground speed. I shift down to 2nd as I near the crests and start to loose momentum.
I personally would be surprised if you could even get all four wheels out into the sand with the stock Wranglers. I would have expected the front wheels to sink in as soon as they left the pavement I used the 285/60/18 Nitto's aired way way down and they floated pretty good. The internal bead design on the stock Land Rover rims is great, and I never rolled a bead.

I have had DSC kick in at the strangest times. I was crawling up a very steep, but quite solid hill once and it kept flashing at me and slowed things to a crawl. I assumed that it was detecting extreme angles and suspension flex and decided the it should slow me down. Once I hit the button to turn it off it zoomed up the hill with the TC barely having to do anything.
It had me stumped for a moment as I was at full power and nothing was happening. No wheel spin, no TC engaging that I could detect just a complete lack of power.

For anyone one interested, Viair 400P compressor is £219.44 (incl VAT + £8.50 p&p) if bought via http://www.mattsavage.com/acatalog/compressors_portable.html , however via ebay £179 (incl VAT + £10 p&p) at http://cgi.ebay.co.uk/VIAIR-12-v-portable-...dZViewItem ! Phoned to check that they were new & same as those bought through mattsavage web site & were. Had earlier phoned to see what discounts were available on 1 compressor & was politely told "none"!
