When you say not tethered to a phone, do you mean never, or just not all of the time?
Pretty much evey one will need to sync to a mobile via bluetooth periodically as they have finite memory and limited display room. My Garmin will happily operate independently of my phone for days on end, but at some point I'll want to tether it if I want to get any value out of the metrics it has captured.I know it's not considered "kind" to say no these days, but no. Just no, ok? And if it's not ok, still no.

As in not tethered all the time. I had an iWatch (for less than a week….), don’t like square watches and quickly felt the watch was an extension of my phone that I never had a choice to ‘put down’.
I predominantly want it as a watch with access to health/activity things. I know it will be tethered to my phone via an app when I want to review it, etc.
I’ve been looking at the Garmin Venu 2 Plus GPS at the moment as ‘best suited’ (I think) but know others on here have many options and opinions before I make the decision

Used to wear a high end G Shock, but changed to this a couple of years ago.
Does everything (& more) that I’d want it to do.
Info is all on the watch, but also on the phone should you wish.
A key feature for me is you can change the watch face & strap to suit your whim.
So it’s like a new watch every time.
Currently I’m on (Tour de France) Yellow strap with black face/yellow digits.
I’ll then move on to Red strap, black face/red digits.
Then so on with Orange, Sky Blue, Lime Green, etc, etc.
It is Chinese but works for me. ...... always on the road less travelled 🚧
< ‘tis but a mere scratch …….. it’ll polish out.

Saw that brand, seems decent enough. I have to admit I do have concerns with Chinese ‘snooping’ and harvesting data (he says with his whole life on an iPhone )

For the reasons in my second comment, further up….
NOT a Google Pixel watch. Useful but a poor battery-life. Not to mention the price dropping £120 a week after I bought one. Back to an analogue watch for me!

Garmin Fenix range all day long. Insane battery life.
Or as you like decent watches, I'd have a look at the Garmin Marq range - some beauties in there with prices to matchD4 XS, gone, much loved, never forgotten

My son has the Garmin instinct. He's just upgraded to the latest one which has solar charging which if you're outside alot apparently makes quite a difference.Today is the oldest you've been and the youngest you'll ever be again.
I've recently upgraded my Garmin Instinct to an Instinct 2X Solar. I'm getting 25-30 days between charges, 8 days with intensive GPS use in the mountainsI know it's not considered "kind" to say no these days, but no. Just no, ok? And if it's not ok, still no.

I've got a Garmin Fenix 6x Pro Solar. It's great. The Garmin 7 is out now.
SWMBO bought the 6s. There's a massive difference in battery life - the bigger 6x has a much bigger battery and goes 3 weeks between charges.MY2022 D5 HSE D300 - with extra nice bits added

I love my Galaxy Watch 4. It is round, so that will suit you, and whilst I need my phone to set it up and do the configuration etc, it works on its own no problem. It does all the health stuff, activity logging, without the phone needing to be connected.
